Go ahead, admit it, your mouth is watering isn’t it? This is one of the simplest desserts I have ever made and it was a huge hit with guests at our cookout over the weekend. This easy blueberry cheesecake recipe will make friends and family think you have spent hours in the kitchen and they will be shocked to see just how simple it is. What’s even better is the blueberries used in my cheesecake are Fresh From Florida! As someone who has grown up in Florida, I love using Florida grown produce and even seafood caught right in the gulf surrounding our beautiful state.
What exactly is Fresh From Florida? Glad you asked! Fresh From Florida together with the Florida Department of Agriculture promotes locally grown Florida produce and fresh seafood. There is nothing more exciting than buying local and nothing, I mean nothing, tastes better than fresh, never frozen seafood from our gulf! Fresh from Florida highlights wonderful ingredients seasonally grown in Florida such as tomatoes, sweet corn (a delish recipe using this coming in a few weeks), watermelon, and today’s feature product, blueberries. Plus, they highlight the seasonal seafood so you can enjoy the freshest ingredients
Take time to check out what’s in season and treat your family and friends to some delicious recipes! That’s exactly what I did over the weekend with family and friends. We all headed down to the river camp to cookout on Saturday and every person brought a side or dessert. Thanks to my Fresh From Florida blueberry cheesecake recipe, I had something to satisfy the sweet tooth while using in season products!
Easy Blueberry Cheesecake Recipe
This easy blueberry cheesecake recipe is perfect for any get together. With just five ingredients, it’s easy and it will be a hit!
Ingredients:
- 3 pints Florida blueberries, rinsed
- 1/2 lemon juiced
- 1 cup sugar
- 1 cup water
- frozen cheesecake, thawed out.
How to make Blueberry Cheesecake
To make you simply pour 2 pints blueberries, lemon juice, sugar and water into a pot and heat over medium high heat until boiling, stirring frequently. Once boiling, reduce heat and simmer 20-25 minutes until sauce thickens. Remove from heat and strain, if desired). We did not strain ours.
Cool to room tempature and refridgerate until ready to use. When it’s time to serve this mouth watering blueberry cheesecake, pour the blueberry sauce over the cheesecake and top with the additional pint of fresh blueberries. This dessert was a huge hit at our cookout over the weekend and I look forward to using it for future get togethers.
