I love to bake, but my baking goes into high gear when fall arrives. There is just something about fall. I don’t know if it is the cooler weather or the holidays approaching but for some reason I tend to bake, bake, and bake some more when the fall months hit. I love to cook too, but for some reason making sweets is what I prefer to do. A new recipe I tried this fall, that will be making it into my #FallFamilyMeals is the Chocolate Chip Cookie Cheesecake Bars! This recipe only has 4 (or 5 if you use the coconut) ingredients and really doesn’t require much effort!

Cheesecake Bar Ingredients

The ingredients for the Chocolate Chip Cookie Cheesecake Bars are: Sugar, Egg, Cream Cheese, Pillsbury Ready-to-Bake Chocolate Chip Cookies, and optional coconut)! *See measurements for ingredients at end of post in recipe form*

Making Cheesecake Bars

You simply take half the chocolate chip cookie roll and with floured fingers press into an 8×8 inch pan. Mix your cream cheese, egg, and sugar in a bowl, then pour over the chocolate chip cook, take the other half of the cookie and crumble over the cream cheese mixture!

How to make cheesecake bars

Bake, cook, refrigerate, cut into bars and then enjoy!!

Chocolate Chip Cheesecake Bar Dessert

Trust me, this will be a huge hit at your Thanksgiving or Christmas get together. I would make a few batches to be safe. If you have people that aren’t fans of chocolate chip cookies (like my husband) trade it out for peanut butter, sugar or macadamia nut cookies to add a different twist!

Chocolate Chip Cookie Cheesecake Bars

Easy Dessert For Your Holiday Parties

Ingredients

  • 1 package 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 roll 16.5 oz Pillsbury refrigerated chocolate chip cookies (or other if not a fan of chocolate chips)

Instructions

  1. Heat oven to 350
  2. Mix cream cheese, sugar, egg in small bowl until smooth (add in any extras you may want)
  3. In ungreased 8x8 pan, spread half the cookie dough evenly to form crust
  4. Pour cream cheese mixture over dough, then crumble remaining cookie dough over cream cheese mixture.
  5. Bake 35-45 minutes or until golden brown
  6. Remove from oven and cool for 1/2 hour
  7. Refrigerate for 1-2 hours, until chilled.
  8. Cut into bars and enjoy!

**Add in coconut before pouring cream cheese mixture over dough, for something extra**
