When I think of fall a few things come to mind and one of them is caramel. I have always associated caramel with fall more than any other season. Maybe it’s because we go to the fair and are surrounded by caramel apples. Regardless, fall makes me think of caramel. So, today, I wanted to share this Caramel Corn Recipe with you, this is definitely one we will be trying soon!
Caramel Corn
Ingredients
- 1 cup butter
- 1 cup light brown sugar, lightly packed
- 3/4 cup GOLDEN BLOSSOM HONEY
- 1/2 cup dark corn syrup
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 6 quarts plain popcorn, popped (3 microwave bags of natural flavor)
Directions
- Over medium heat melt the butter then blend in the brown sugar.
- Add the next 3 ingredients, stirring constantly until mixture boils.
- Cook uncovered and without stirring for 5 minutes.
- Remove from burner and add baking soda and vanilla.
- Pour warm mixture over popcorn and toss until coated.
- Spread popcorn out on two cookie sheets and bake at 250ยฐ for one hour.
- Every 15 minutes stir the popcorn to keep it from burning.
- Allow to cool.

That would be just perfect with a mug of apple cider! I like drizzling caramel on just about everything in the fall (so good on brownies!), as it just tastes like fall to me.
