Peeping Bunny Cupcakes

I love Easter.  I love what it stands for and as a family we always get together to celebrate Easter.  This year I wanted to have a little fun using some tasty treats from Peeps and products from Wilton.  I wanted to make some fun to look at and more fun to eat Easter treats. I have a few posts coming highlighting each treat but here is a photo of all the goodness:

Peeps Easter Treats

Seriously, how much cuter can you get!  I look forward to this time every year, because of the release of Peeps in the pretty colors.  Yes, I know they come out other times of the year, but there is just something about Easter time Peeps that make me nostalgic.  I thought about what I wanted to make with the fun products Peeps and Wilton sent to me, and decided I wanted something that was kid friendly.  My kids love to help in the kitchen, so why not make it fun for them to make and eat!  I made a Sunflower Peeps Cake, Birds In A Nest, and Peeping Bunny Cupcakes.  Today I am going to show you how easy it is to make the Peeping Bunny Cupcakes!

The supplies are simple.  Your favorite boxed cake mix (and the ingredients needed to make it), Peeps Bunnies, Wilton Icing Colors, Wilton Flowers, Candy Coated Eggs, Mini Flower Pots, Wilton Cupcake Liners, and Coconut.

Prepare your cake mix according to package instructions for cupcakes. While it was baking, I went ahead and dyed my coconut, which would be the “grass” and my icing so it would have a green base.  I used a chocolate cake mix because I thought it would be fun to have “dirt” under the grass.  After the cupcakes are done, allow them to cool completely before icing.  Once iced, I placed the cupcake into one of my flower pots.  If your’s won’t go all the way to the bottom, you can add some treats under the cupcakes as an added surprise!

After icing the cupcakes and placing in the flower pot, I added the grass…this is what the kids love.  To them a bunny is usually seen in grass, so it tickles them to see “grass” on a cupcake.

Once you have applied the grass, the next part is placing the bunny so he is peeping over the edge or out of the middle of the grass.  To do this you can either cut out part of the cupcake and place the full Peep inside, but since I like to eat Peeps, I went a different route.  I ended up cutting the Peep in half (and totally ate the other half) which worked great!  After placing your Peep Bunny, add your decor, we liked the Wilton Flowers and Egg-shaped candy-coated chocolate!

We also left one out of the flower pot, using just the cupcake liner.  Kept it simple with just “grass” and flowers and it turned out super adorable too!  These are absolutely the cutest treats for Easter!  You could make some to send to school with your child, have them for Easter dinner dessert with family, or just make together as a family.  Kids will have a blast putting these little Peeping Bunny Cupcakes together! With such a big selection of Peeps at your local Walmart, there are many fun treats to be had!
