Peanut Butter Oatmeal Cookies

I love to bake, so when I was asked to take part in a campaign with Lunchbox and Sam’s Club that would allow me to do just that, you know I said yes.  While I plan on making every single recipe I found on the Sam’s Club site, this is the one I am bringing to you today!

Country Crock Peanut Butter Oatmeal Cookies

The Country Crock Peanut Butter Oatmeal Cookie Recipe is simply put…perfection.  The cookies turned out so moist and they will make a great addition to our New Years Eve celebration tonight!

While the list of ingredients was a bit on the longer side, every bit of it was something I had on hand, thanks to the shopping I love to do at Sam’s Club.  One of my favorite things to keep on hand is Shedd’s Spread Country Crock, it’s such a versatile ingredient to have.  Perfect for any kind of cooking or baking I will be doing during the holidays or throughout the year!  Unlike regular butter, I love how easy it is to add in, because it is super soft!  Check out a few of the steps to cookie perfection!

Making Oatmeal Peanut Butter Cookies

The recipe I am going to share, in just a moment, make 6 dozen perfect Peanut Butter Oatmeal cookies (or Oatmeal Peanut Butter Cookies..whichever you want to call them)!  So it’s perfect for a large crowd!

Peanut Butter Oatmeal Cookie Recipe

These super soft peanut butter oatmeal cookies will be perfect anytime you want something sweet and soft.

Ingredients

  • 2 cups quick-cooking oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Country Crock Spread
  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 cup firmly packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • *optional* 1 package 12 oz semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Combine oats, flour, baking powder, baking soda, and salt in medium bowl; set aside
  3. Beat Country Crock Spread with peanut butter in large bowl with electric mixer, on medium, until smooth
  4. Beat in sugars, then eggs and vanilla until blended
  5. Beat in flour mixture just until blended, then stir in chocolate chips if using
  6. Drop dough by rounded tablespoonfuls onto ungreased baking sheet, 2 inches apart
  7. Bake 13 minutes or until golden. Remove cookies to wire rack and allow to cool

Recipe Notes

For the cooking time, I took them out at 11 minutes and they were perfect! So you may want to try a small test batch to see how your oven bakes.
