The holidays are a fun time of year, as well as a tasty one, and I make some of my favorite dishes for my family for Christmas. I’m going to share one of my favorite holiday recipes today on my friend Toni’s blog (and for more great Christmas recipes, visit my site Penelope’s Oasis).
One of my favorite holiday treats is Christmas Peanut Brittle, a sweet and nutty snack that children love. The combination of sweet and salty make it a favorite for many people, and it’s so easy to make as well. Your children can help you to make (and eat) it, and peanut brittle makes a great treat to give as a gift. Simply put some bricks of peanut brittle on a pretty tray or dish, wrap with colorful cellophane paper and tie with a bow, and voila, a great gift for neighbors and hosts.
Ingredients
- 2 cups sugar
- 2 cups peanuts
- 1 cup white corn syrup
- 1/2 cup water
- 1 tablespoon butter
- 2 teaspoons baking soda
- 1 teaspoon vanilla
Directions
- Bring 1/2 cup water to a boil and add sugar and white corn syrup. Boil until it spins a thread.
- Add peanuts and cook until golden brown. Remove from heat.
- Stir in butter, baking soda, and vanilla and quickly spread mixture onto two greased cookie sheets.
- Chill peanut brittle for at least one hour before breaking apart.
It’s very tasty and sweet, and because of how rich and sweet it is I only make this around Christmas time. I hope you enjoy it and love it as much as we do. Happy holidays!
*Thank you Penelope for sharing this recipe and guest post with my readers. I will definitely be trying it out here in my home. ~Toni

My Grandma used to make the best peanut brittle, I think she used spanish peanuts but I can’t be certain. My dad has her old recipe book stashed somewhere. I also like cashew brittle!
This recipe seems easy enough even though i do not have much luck with brittle. Thanks
I use to have a receipe for Peanut Brittle in the microwave and I guess I stuck in a box of cookbooks, but now I found this and I want to try it. I hope that I can remember that crazy perfect time of that string phase. But I now have almost everything to make it. One trip to the grocery and I’ll be off. Thanks so much for posting this., my family will love I”m making it again. I use to put the candy in tins and give to each family with fudge. This will be a great Christmas I just know it.
