School is back in session, which means I can work for a few hours uninterrupted. It also means we have a pretty packed schedule. We have something going on every single day of the week. I coach cheer two days, my boys have soccer two days, my daughter has tumbling one day, all have games on Saturday, and Sunday we go to church. Needless to say our nights are chaotic with all the practices, so finding a way to make dinner time less stressful is high on the priority list. Thankfully, Walmart had me in mind when they came up with their Coca-Cola Effortless Meals!
I can head into Walmart and get all the ingredients for an easy, effortless meal. Just look for the Coca-Cola Effortless Meal sign in your Walmart to get one of two simple meals. One of our favorite meals is chicken and dumplings. Now, usually that means a lot of effort…not anymore. This quick chicken and dumplings tastes like it has been cooked all day, but it’s ready in less than 30 minutes from start to finish!
Using just four ingredients, including the 29 oz Rotisserie chicken from Coca-Cola Effortless Meal bundle, it’s a meal that easy to make on those busy weeknights! With the Coca-Cola Effortless meals, I get to choose between two meals for those busy weeknights. Either a Rotisserie Chicken, with TWO 2 lb sides (Macaroni Salad, Potato Salad, or Cole Slaw) and a 2 liter Coca-Cola product OR you can pick up a Pizza Meal (16″ pepperoni or five cheese pizza) and a 2 liter Coke product. So, you can change it up! For our dinner, we wanted a comfort food, and so Chicken and Dumplings is what we had!
While it would be a great meal just to enjoy the chicken with the sides and the coke (and some of my kids did just that) I like a little something extra. So, chicken and dumplings it is. These chicken and dumplings are so easy to make and with just four ingredients it’s possibly one of the easier recipes to make. Here is how you make almost effortless chicken and dumplings!
Measure out your ingredients! Once everything is measured out, it’s time to get started. I always start with my dumplings, so they are ready to throw in the broth once it starts boiling. To make the dumplings mix your milk with your baking mix, and then roll out on floured surface to 1/8″ thickness. Cut into 2 by 2-inch squares.
Set dumplings aside. Next, pour the broth into a big pot or dutch over (whichever you have on hand). Turn temperature to high and while waiting for it to boil, remove skin from chicken and shred. Once broth is boiling, add chicken. Cover, and allow to return to a rolling boil, turn heat to medium low.
Finally, add your dumplings. They should rise to the surface and expand, they get HUGE! After about 20 minutes, they are ready to eat (cook less if you like them a little more doughy).
If you want, you can add veggies before you add the chicken, and allow them to cook until tender before adding the chicken. Our kids are picky, so we do just chicken and dumplings with veggies on the side, instead of in the dish. This meal is a favorite in our house and is so easy to make. Definitely one of our regular quick and easy meals for busy weeknights!

I love chicken and dumplings, though it never occurred to me to use rotisserie chicken thats such a great short cut. To save even more time you can use refrigerated biscuits for the dumplings and they taste very similar.
What a great shortcut for a busy weeknight meal! I love how the rotisserie chicken meal can be used as a meal unto itself, but also in such a delicious recipe like your chicken and dumplings! #client
